Jon Fonos started his "from lake to plate" business, Fonos Fish, more than 15 years ago. Jon's process for handling his catch hasn't changed much over the years. He fillets and debones every fish he catches from his government-inspected processing plant in the northern community of Dore Lake. Everything is frozen within hours of coming off the lake.
